Vegan Fettuccine Alfredo w/ Mock Chicken

  • 2 1/2 cups unsweetened almond milk
  • 1/3 cup coconut oil
  • 3 tablespoons white miso
  • salt and pepper
  • 10 ounces cauliflower florets, cut into 1/2-inch pieces (3 cups)
  • 3/4 cup raw cashews, chopped
  • 1 pound fettuccine noodles
  • 2 tablespoons chopped fresh parsley


  1. Heat coconut oil in a pot with miso and whisk until blended
  2. Add cauliflower, cashews, almond milk, and boil gently until soft.
  3. Blend in vitamix until smooth
  4. Cook fettuccine noodles according to package
  5. Heat chicken in skillet until exterior is lightly browned
  6. Add all ingredients to a medium pot until warm throughout
  7. Add parsley, salt, and pepper to taste
  8. Eat it all gone.
