Ingredients
- 2 1/2 cups unsweetened almond milk
- 1/3 cup coconut oil
- 3 tablespoons white miso
- salt and pepper
- 10 ounces cauliflower florets, cut into 1/2-inch pieces (3 cups)
- 3/4 cup raw cashews, chopped
- 1 pound fettuccine noodles
- 2 tablespoons chopped fresh parsley
Instructions
- Heat coconut oil in a pot with miso and whisk until blended
- Add cauliflower, cashews, almond milk, and boil gently until soft.
- Blend in vitamix until smooth
- Cook fettuccine noodles according to package
- Heat chicken in skillet until exterior is lightly browned
- Add all ingredients to a medium pot until warm throughout
- Add parsley, salt, and pepper to taste
- Eat it all gone.
